Crossing the Bridge Noodles

One of the famous dishes of the Kunming area is the famed "Crossing the Bridge Noodles."  The legend goes that in days of yore, a married couple lived in the area and the husband was studying hard and would spend his days on an island.  Therefore his wife cooked his lunch every day and had to devise a way and a recipe that was both tasty and also manage to stay hot as she took the time to cross a bridge.  Therefore, the name.

First, you are seated and the noodles are already on the table.  However, it's a trap!  It's the tower of plates, which hold all the special add-ins to the bowl of noodles which are to be dealt with first.

Then a big hot steaming bowl of soup arrives in front of you and you dump in the items you want in your bowl, choosing all kinds of meats, vegetables, eggs, you name it.

Noodles go in last, stir, let it simmer and add hot sauce if that's your thing.

Bam!!  There's dinner.
